Sharing Stories Through Food

At Kō, every dish is a celebration of Maui’s diverse heritage, inspired by the many cultures that came together during the sugarcane era—Hawaiian, Filipino, Portuguese, Korean, Japanese, and Chinese. Inspired by the spirit of “kaukau time,” when sugarcane workers shared home-cooked meals over lunch and talked story, our menu honors that tradition of connection through food. Rooted in history and layered with flavor, Kō is a gathering place where every bite tells a story, and every meal connects generations.

A New Era

At the heart of Kō’s new era is Executive Chef Matt Dela Cruz, whose personal, multi-generational connection to Hawai‘i’s sugarcane era inspires every dish. Born and raised in the town of Kekaha on Kaua‘i, his earliest memories revolve around home-cooked meals, shared traditions, and the unique flavors that shaped his upbringing. Chef Dela Cruz brings what he calls “elevated comfort” – blending refined technique with the familiar flavors of local home cooking and sourcing ingredients from Hawaiʻi’s farmers, fishermen, and food producers to create dishes that reflect place and community.
